Produced in-house
Milk processing and meat production are entirely in our own hands, to ensure high quality and serve animal welfare. The milk supplies Zams Hospital and the sisters' educational institutions as well as dairies and other businesses in the surrounding area.
The lush meadows at Kronburg are mown twice a year to provide feed for the cows. In return, milk, yogurt and veal from our own farm make their way into the inn's kitchen.
Local products first!
At Gasthof Kronburg, the focus is clearly on local products that are as regional as possible. The produce from the Sisters of Mercy's farm has a permanent place on head chef Josef Kiss-Haueis's menu. And he knows all his other suppliers in Austria and South Tyrol personally, too.
A real treasure is Kronburg's own spring, which brings forth fresh water. Even so, this precious resource is handled with care. That is why water from the fountain and the Kneipp basin is used a second time as toilet flushing water.
With a holistic ecological approach, the order of the Sisters of Mercy of Zams makes its contribution to a good life. A small-scale cycle, from the farm to the kitchen.
On the value of things
Living sustainability
When taking over Kronburg, the order gave a great deal of thought to how this natural and cultural jewel of the Oberland could be preserved.
First, the Klösterle and the inn were thoroughly renovated and solidly furnished. The Sisters of Mercy also had a wood-chip heating plant, a new well house and a sewage line built.
Part of the concept is also keeping the center of Kronburg car-free. Visitors and guests can leave their vehicles in the parking area at the entrance to the hamlet. For the benefit of all, driving and parking are prohibited between the buildings and in the surrounding meadows.
